Directions:

Step 1: Cook the Potatoes

  • Boil the potatoes until tender.
  • Cool them down completely.
  • Cut into large cube.

Step 2: Prepare Alioli Sauce

  • Peel and slice the garlic.
  • Beat the egg yolks until they turn pale and creamy.
  • Slowly add oil drop by drop while continuously beating the yolks.
  • When the mixture thickens like mayonnaise, start adding oil in a thin stream.
  • Incorporate the garlic, lemon juice, and salt to taste.
  • If the sauce is too thick, dilute it with soda water or clear water.

Step 3: Assemble the Dish

  • Dress the potato cubes with the freshly made Alioli sauce.
  • Sprinkle with chopped parsley and pink peppercorns.

Step 4: Serve

Serve the dish cold and enjoy!
