Pisto Manchego (Spanish Vegetable Stew)

Pisto Manchego is Spain’s version of ratatouille, a vibrant vegetable stew made with tomatoes, peppers, zucchini, and onions, all simmered together in olive oil. Directions

Step 1: Prepare the vegetables

  • Chop the tomatoes, zucchini, peppers, onion, and garlic into small pieces.

Step 2: Sauté the vegetables

  • In a large pan, heat the olive oil and sauté the onion and garlic until softened. Add the peppers and zucchini and cook for about 10 minutes.

Step 3: Add the tomatoes

  • Add the chopped tomatoes to the pan, season with salt and pepper, and cook for an additional 10-15 minutes until the vegetables are tender and the sauce has thickened.

Step 4: Serve

  • You can serve the pisto on its own or with a fried egg on top for extra richness. It can be eaten warm or cold and is typically accompanied by crusty bread.
