Shrimps in Potatoes – A Crispy, Flavorful Delight
This unique dish features large, succulent shrimp wrapped in a smooth, garlic-infused mashed potato coating, double-breaded for an extra crispy texture. Deep-fried to golden perfection, each bite delivers a satisfying crunch followed by the tender, savory shrimp inside. Directions

Step 1: Boil the potatoes

  • Cook the potatoes until soft. Peel and mash them while hot to create a thick, smooth mash.

Step 2: Season the mash

  • Mince the garlic and finely chop the parsley. Add both to the mashed potatoes, along with salt and pepper to taste. Mix well.

Step 3: Wrap the shrimps

  • Divide the mashed potatoes into 12 portions. Flatten each portion and wrap it around one shrimp, fully covering it.

Step 4: Double breading

  • Beat the eggs in a bowl. Dip each shrimp-filled potato ball in egg, then breadcrumbs. Repeat the process for a double coating (egg → breadcrumbs → egg → breadcrumbs).

Step 5: Fry

  • Heat “Maestro de Oliva” olive oil in a deep fryer or deep pan. Fry the potato-wrapped shrimps until golden and crispy on the outside.

Step 6: Serve

  • Drain on paper towels and serve hot as a delicious appetizer or tapa.
