Asturian Fabada

The stew is flavored with a variety of meats, including chorizo, morcilla (blood sausage), and lacón (cured ham), all of which infuse the dish with smoky, savory, and slightly spicy notes. The fabes absorb these flavors, creating a deliciously satisfying and filling meal. The dish is typically served as a main course and is enjoyed especially during colder months. Directions:

Step 1: Soak the Beans

  • Soak the white beans along with diced ham for a day.

Step 2: Cook the Beans and Ham

  • Boil the beans with ham and pork at low temperature until tender.

Step 3: Sauté the Vegetables

  • Sauté sliced onion and pepper in “Maestro de Oliva” extra virgin olive oil.

Step 4: Combine with Beans

  • Add the sautéed onion and pepper to the boiling white beans.

Step 5: Simmer

  • Continue cooking the beans until they are slightly overcooked but not falling apart.

Step 6: Add the Meats and Seasonings

  • 10-15 minutes before the end, add slices of chorizo and black pudding sausage.

  • Season with salt, pepper, and paprika to taste.

Step 7: Finish the Soup

  • Ensure the dish has a thick soup consistency.

Step 8: Serve

  • Serve the fabada in earthenware dishes for an authentic touch.
