There are such substances as carotenoids. Plants need carotenoids to absorb solar energy. They make tomatoes red, oranges orange, etc. Among them, the well-known beta-carotene, is the main defender of human immune system, and lycopene, able to normalize cholesterol level, there’s also lutein that protects the retina of the eyes and others. These substances suppress oncogenes, that is prevents cancer.
Carotenoids do not dissolve in water. To get them into your system, the presence of fat is essential. For example, only 1% of carotenoids are metabolized from raw carrots, after addition of olive oil, the percentage will rise to 25. By the same principle, vegetables should be fried and stewed with olive oil.
